Cooking Adventures

This salad recipe was a pleasant surprise. I would have never think about combining this few ingredients together. It was really yummy but some of my students thought otherwise. Serving vegetables to children gets tricky and a lot of times they don't even want to try them . I could tell who had edamame before and enjoyed snacking on it. There were some tears over tomatoes but we work through it and at the end everyone took at least few bites.

I will be making Cucumber, Tomato, and Edamame Salad soon.

INGREDIENTS ( makes6 to 8 servings):

1/2 cup apple-cider vinegar

1 teaspoon white sugar

1/2 teaspoon salt

1/2 teaspoon chopped fresh dill

1/4 teaspoon of ground black pepper

2 tablespoons vegetable oil

2 cucumbers

2 ripe tomatoes ( I used cherry tomatoes)

Edamame ( green soybeans),fresh or frozen whole in shells

* Remove the edmame from the freezer the day before making the salad and place in the refrigerator

PREPARATION:

Slice the cucumbers and put them in a large-size bowl. Cut the tomatoes into wedges and add them to the cucumber. Do the same with edamame. Sprinkle everything it with sugar, salt, dill and black pepper. At the end add the oil and apple -cider vinegar.
