Oh boy ! It feels like it's been a while since I posted something about our sweet Sunday's adventures. I blame it on a nice weather ! It is really hard to fit in any baking during the summer days and sometimes it gets SO hot and humid that the last thing I think about is turning on the oven. That's why during the warm season you may find here recipes that will cool off your days.
We kicked off with a Creamy Raspberry Ice Pops. There were super easy to make and here is how you do it.
1 cup fat free milk
1 (1 ounce) package instant sugar-free vanilla pudding mix
1/2 cup fat free milk
1 cup fresh raspberries
2 cups raspberry sherbet, softened
2 cups reduced-fat frozen whipped topping, thawed
- Pour 1 cup of milk into a bowl, and stir in pudding mix. Beat with an electric mixer about 2 minutes until thickened. Place the remaining milk and raspberries into a blender and puree until smooth.
- Pour the raspberry puree into the pudding, and add the whipped topping. Stir together until incorporated. Stir in the softened sherbet. You may either mix it in completely, or leave it swirled.
- Divide this mixture evenly among 10 molds or small plastic cups. Place a wooden craft stick into each, and freeze for at least 3 hours.
P.S : I had a hard time to find a raspberry sherbet until I visited Trader Joe's :)
