It is in Polish tradition to bake " Mazurek" for Easter. To be honest I have never tried to do it while living in Poland but this past Sunday I gave it a try. One of my Polish friends suggested a recipe and it looked divine . Since we had almost all the necessary ingredients ( quick run for the hazelnuts in early morning was a breeze ) it only seemed right to make it on this special Sunday. It turn out later that it was more difficult to make it as I thought it will be and I continuously questioned myself if I'm doing everything right. Possibly because I had to covert Polish recipe/ measurements into English. After all cake turn out great and my husband gave me the best complement on it.
Here is the original recipe and my version in English.
To make Mazurek with Hazelnuts and Milk Chocolate you will need:
6 oz. of flour
4 oz. of grinded hazelnuts
1.7 oz. of sugar
5 oz. of butter
10 oz. of milk chocolate ( I used chocolate chips )
80 ml heavy whipped cream
1. In the mixing bowl stir together flour , grinded hazelnuts ( I used coffee grinder to grind them ) and sugar. Add sliced butter and mix it well until combined ingredients turn into little pieces of dough. Add egg . Squeeze the dough with your hands and roll it into the well blended ball. Cover it up and put it into refrigerator for 30-40 minutes.
2. Take it out on a wax baking sheet and roll it flat into 9x9 square. Transfer your dough with a baking paper into the 9x9 baking pan. Place it back into refrigerator for another 30 minutes.
3. Bake your dough in 325 F for 35 minutes. Until it's golden. Take it out and let it cool off.
4. Melt your chocolate adding heavy whipped cream. Pour it into your cooled off dough ( try to be quick about as chocolate and heavy whipped cream are getting thick pretty fast ). I added some extra grinded hazelnuts into my chocolate and whipped cream mixture and sprinkled some on the top with whole hazelnuts at the very end as a decoration.
