I skipped baking a cake last weekend because the weather was so nice that we couldn't resist the opportunity to play outside. This weekend was extremely busy. Pola and I had our usual Polish class and we also had a team of people working on the siding of our house through Friday and Saturday. Our front yard and backyard remained messy when all of them left. We spent most of our Sunday morning raking and digging in the dirt. This time around we put some seeds but who knows if they will come out because it is 36F degrees and snowing as I'm writing this post. Lets hope they will...
Anyway... On this busy Palm Sunday we managed to whip up some banana bread and attend church. We enjoyed this homemade beauty right after we came back.
1 Tablespoon of vanilla extract
1 tablespoon of honey
1/4 cup of shortening (butter)
2 cups of almond flour
1/2 teaspoon of sea salt
1 teaspoon of baking soda
We tossed the bananas, eggs, vanilla and butter & honey in the food processor and pulsed until thin enough to add flour, salt, baking soda (& chocolate chips optional). Bake at 350 degrees for approx. 50 minutes and serve.
